Ingredients –
1. Cooked rice 1 cup
2. Grated cucumber 2 tbsps
3. Grated carrot 2 tbsps
4. Grated beetroot 2 tbsps
5. Chopped green chilli 1
6. Chopped garlic ยฝ tsp
7. Chopped ginger ยฝ tsp
8. Chopped spring onion 1 tbsp
9. Hung curd 3/4 cup
10. Coriander and pomegranate seeds for garnish
For tempering
1. Desi ghee 1-2 tbsps
2. Mustard seeds 1 tsp
3. pinch of Heeng
4. Dry red chilli 2-3
5. Roasted Chana dal 1 tbsp
6. Cashews 8-9
7. Peanuts 1 tbsp
8. Curry leaves
Recipe –
1. Take boiled/ cooked rice in a bowl. Add grated cucumber, grated carrot, beetroot, garlic,ginger,green chilli and spring onion mix it well and add hung curd to give a good mix.
2. Prepare the tempering using the tadka
ingredients and add it to rice and curd mix.
3. Mix everything and garnish with coriander andpomegranate seeds.
