Learn how to make healthy cottage cheese pancakes. In this recipe I am demonstrating two easy methods to make cottage cheese pancakes. The first method using spelt flour and the second is using oatmeal that also makes the pancakes gluten free.

Ingredients:
1 cup (250g) Cottage cheese
2 Eggs
1 teaspoon Vanilla extract
1-2 teaspoons Maple syrup/honey/sugar (optional)
1/2 cup (63g) Spelt flour *or plain flour
Pinch Salt
1 teaspoon Baking powder
1/2 teaspoon Cinnamon (optional)
Oatmeal version:
2/3 cups (60g) Rolled oats/oat flour
Directions
1. In a blender place cottage cheese, eggs vanilla extract and sweetener. Blend for a few seconds, just until smooth.
2. Add flour, salt, baking powder and cinnamon. Blend just until combined.
3. Heat a large non-stick pan over medium heat. Lightly coat with oil or cooking spray. Pour 1/4 cup (or less) and cook until bubbles form on the surface, and the edges start to look set, about 1-2 minutes. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
4. Serve with fresh fruit or maple syrup.
