1 pack Persian cucumbers
1 pint tomatoes
1/2 red onion
1 handful fresh parsley
1 mango
Dressing:
3 tbsp. olive oil
2 tbsp water
2 tbsp tahini
2 small/1 large garlic
2 tbsp rice vinegar
1tsp honey/ maple syrup
Salt & pepper to taste
Freshly squeezed lemon juice (1/2 lemon)
water (to liking)
