hey y’all welcome back to my channel if you are new here my name is Kayla and welcome today we are making these super delicious high protein cottage cheese pancakes and let me tell you they are a must try I just love finding creative ways to incorporate cottage cheese because it’s such an easy way to sneak in extra protein and it has such a mild flavor to it which allows you to incorporate into a lot of different types of recipes in fact if you haven’t seen my video titled six high protein snacks using whipped cottage cheese you have to go watch that one after this one because there’s lots of great high protein snack ideas in that video but today’s pancake recipe is not only high in protein it’s also completely gluten-free and it’s perfect for meal prep because the pancakes will stay fresh in the fridge for up to 5 days and you can even batch prep them and freeze them for up to 1 month but be sure to check out the blog post because I’ve listed some extra tips over there on how to properly prep and store the pancakes if you new plan on meal prepping them of course you can also print out the full recipe card over on the blog post as well as calculate the macros I’m going to have that linked for y’all in the description box below but anyway I am starving and ready to dig into these pancakes so let’s head to the kitchen and get started so the best thing about these pancakes is that they are super easy to make it’s as simple as adding all the ingredients into a food processor or blender giving it a quick blend and then frying them up we’re going to start by adding one cup of oldfashioned rolled oats and this is going to act as our flour since we’re not using an actual flour for these pancakes any brand will work but this is my favorite brand it’s certified gluten-free organic and sprouted which makes them easier to digest next up we have the star of the recipe which of course is the cottage cheese you’ll need one cups worth the cottage cheese not only adds extra protein to the pancakes but it also adds moisture and gives it a really nice texture I personally like the good culture brand but any type of cottage cheese will work let’s add one ripe banana and make sure that it has spot on it if you have one even more ripe than this one I’m showing here that’s even better it just means that it’s going to be sweeter and since this is the only sweetener that we’re adding to our pancake batter you want to make sure that it’s extra ripe now if you’re in a hurry and you don’t have time to let the banana get all the way ripe just add in about 1 to 2 tblspoon of raw honey I’m also adding 2 teaspoons of aluminum free baking powder this is going to act as our leavening agent half a teaspoon each of cinnamon and vanilla extract for extra flavor and lastly add in two eggs the eggs are going to serve as our binding agent to hold everything together plus they help to boost the protein and nutritional content even more now I’m just giving it a quick blend for about 30 seconds but be careful not to over blend it because then the pancakes will turn out too dense and if you want to thin out the consistency of the batter feel free to add about 1 to 2 tablespoons of any type of milk I’m adding in about a tablespoon of unsweetened almond milk just keep in mind that the thinner the consistency of the batter the flatter and more dense the p pancakes will be all right let’s heat a large Skillet or griddle over low medium heat add some non-stick spray or oil and let that heat through then add 1/4 cup of the pancake batter to the pan spread it out as thin as you’d like and we’re just going to let that cook until it starts to form small bubbles on the surface and when the bottom is firm enough to flip and you’ll want to repeat this process until all of the batter is gone I just continue to cook them on each side until they get that golden brown color but this recipe yields eight pancakes and one serving is equal to four pancakes of course all the measurements and macro counts are listed over on the blog post which I do have linked for y’all in the description box below but these bad boys are done when you’re ready to serve it just add your favorite healthy toppings I’m adding some Greek yogurt for extra protein a little bit of almond butter fresh berries and of course some pure maple syrup and it is time to dig in I mean how delicious do these look y’all these protein pancakes are also great for meal prepping because they’ll last in the fridge for up to 5 days and you can even batch prep and freeze them for up to 1 month and because one serving is four whole pancakes with 27 g of protein it’s really going to fill you up it’s super satisfying and I promise you it’ll keep you full all morning long well all right y’all that
