Serves four – 6 Syns per serving (deduct 6 Syns if using the Parmesan-style cheese as a Healthy Extra)
Peel and finely chop 1 onion and 1 carrot. Spray a deep, lidded, non-stick pan with low-calorie cooking spray and place over a medium heat. Cook the onion and carrot for 10 minutes, stirring
regularly. Finely chop 2 garlic cloves and 1 large courgette, add to the pan and cook for a further 5 minutes. Tip in a 400g can chopped tomatoes. Pour in 1.2 litres vegetable stock, then bring to the boil. Reduce to a simmer and cook for 15 minutes. Add 150g dried orzo pasta and cook for 10 minutes. Add 300g finely sliced sweetheart cabbage. Cover and cook for 4 minutes, then take off the heat. Grate 120g fresh vegetarian Parmesan-style cheese, then stir 80g through the soup and season
to taste. Spoon into 4 bowls, then sprinkle over the rest of the cheese.
