Ingredients:
For Kejriwal Chutney:
10-12 Green chillies
1/2cup onion
Handful fresh coriander
1/4tsp black pepper
1/2tsp Salt
1/4tsp sugar
1/2tsp lemon juice
Water, as required
2-3tbsp oil
10-12slices of bread
1cup Mozzarella Cheese
2tbsp Butter
6pc Egg
2tbsp Oil
Salt, to taste
Pepper, to taste
Method:
– Using a cookie cutter or a small cake ring, cut discs from a slice of bread. Set aside for later.
– Butter the bread discs and toast it in a pan for 6-8 mins until toasty.
– Add chillies, onions into a blender along with Salt, pepper, sugar, lemon juice and some water. Blend into a smooth paste.
– Top off with some oil and blend for 1-2 seconds just to emulsify.
– Place the same cake ring onto a pan, lightly oil.
– Crack an egg into the ring and cook until the egg whites are set.
– On top of the toast, place the fried egg and the grated cheese
– Place it in a pan for 3-4mins or until the cheese is melty.
– Add Kejriwal chutney on the serving plate, place the cheesy toast and finish with some more chutney.
– Garnish with fresh parsley
