Indian Stir fry vegetables are not just easy to make but they are packed with loads of flavor and make a delicious and healthy side dish for roti or rice. This sabzi is a unique side dish that has a perfect blend of spice, sweet (from the carrots), and a tad bitter (from methi leaves/fenugreek leaves). The secret to making a delicious sabzi is the use of fresh ingredients. Fresh carrots and fresh methi leaves (fenugreek leaves) does the trick to this sabzi as well.

1 bsp mustard oil
¼ tsp Hing
2 dry red chiles
1.5 cup carrot cubes
2 cup chopped fenugreek leaves / methi leaves
¼ tsp turmeric powder
1 tsp salt
150 g paneer cubes
1 tsp chopped ginger
2 chopped green chilies
½ cup water
1 tsp sugar
