I didn’t upload last week as I was travelling but I promise you this one is going to be a good one! It’s an explosion of flavours. Spicy tangy, salty peppers & feta with a subtle bite. Another easy recipe 😊
At a time like this we all need to do stuff that makes us happy. For me, it’s always been a hobby to cook and also when people enjoy the food it makes me intensely happy.

RECIPE BELOW
Ingredients:
6 peppers
1/2 cup of olive oil
1 tbsp of celery (minced)
1 tbsp of parsley (minced)
1 tbsp of onions (minced)
1 tbsp of garlic (minced)
1 tbsp of tomato puree
400g of feta cheese
1-2 tsp of chilli flakes
Instructions:
1. Preheat oven at 180C (360F Gas mark 4)
2. Into a bowl, mix throughly together olive oil, celery, parsley, onions, garlic, tomato puree, feta cheese & chilli flakes.
3. Prepare and seed peppers and brush with olive oil.
4. Stuff your cheese mixture into the peppers & place into a preheated oven for 30 minutes.
5. Serve with warm bread.
Suitable for vegetarians and vegans if using vegan cheese.
