Sharing this healthy and flavorful recipe for your next meal prep! Made some honey dijon salmon with lemon pepper zucchini and white rice. Most of the work is done by the oven, and you can have several meals ready in less than 45 minutes. I wash the dishes while everything cooks to save time. Enjoy!

Honey Dijon Salmon 🐟🍯

Ingredients:
-1 lb fresh salmon
-1/4 cup olive oil
-1/4 cup red wine vinegar
-1 tbs dijon mustard
-1 tbs honey
-2 tsp Worcestershire sauce
-1 tsp onion powder
-1/2 tsp salt
-1/2 tsp black pepper
-1/2 tsp red pepper flakes

Instructions:
-add above ingredients (except for salmon) into a deli container or jar; shake and mix until sauce is emulsified
-place foil on baking sheet; spread 1 tbs of sauce before placing down salmon
-fold the foil up against the salmon to create a barrier edge to keep the sauce up close
-pour sauce all over the salmon
-bake at 375F for 15-20 minutes (until internal temp is 145F and salmon is flaky)

Lemon Pepper Zucchini πŸ‹πŸ₯’

Ingredients:
-3 medium zucchinis, thinly sliced
-3 tbs olive oil
-1 tbs lemon pepper seasoning
-1 tsp onion powder
-1 tsp paprika

Instructions:
-add above ingredients into a bowl and mix well
-bake at 375F for 30 minutes

White Rice πŸšπŸƒ

Ingredients:
-2 cups uncooked white rice, washed
-about 3 cups of chicken stock
-dried bay leaf

Instructions:
-wash rice and add enough chicken stock so that when you touch the top of the rice with your fingertip, the liquid comes up to your first knuckle
-add bay leaf and cook
-fluff rice when finished

hey guys let’s meal prep some salmon and rice here I make a honey Dion salmon with some lemon pepper zucchini and steamed white rice so I start by washing our white rice until the water runs clear adding some chicken bullon bay leaf and then cooking it here I’m washing our zucchini preheat the oven to 375Β° F then I thinly slice our zucchini I add it to a bowl with some oil the spices listed in the description give it a good mix then lay it all flat on a baking sheet then I bake it for about 30 minutes in the meantime I’m making our sauce for our salmon I add all our ingredients into a small Deli container then I place on the lid and give it a good Shake so it emulsifies and mixes really well then I give it a taste test to make sure the ratios are good place the foil on a baking sheet with a bit of the sauce add the salmon then I’m raising the edges and folding it up so it hugs the salmon then I pour the sauce all over that way it stays close to the salmon I bake for 20 minutes then I wash our dishes and repair our meal containers the rice is all done I fluff it all our ingredients are ready now I just build our meals I love this recipe because it’s healthy flavorful and pretty much all done to the oven I dump some extra sauce on the salmon and it’s all done I leave some salmon for the boys as well take care guys and follow for more
