For brunch today I’m making egg sandwiches I’m cooking one for myself and one for my husband so I’ll be making two of them I’m starting off with rinsing and chopping up some vegetables that I’m going to cook in a pan before adding the eggs for that I’m having bell peppers mushrooms and Tomatoes [Applause] I want the vegetables to cook for a bit first before I add the eggs but I am whisking up the eggs in a bowl so that I can add those in a few minutes and then I’ll have everything together as an egg scramble on top of toast I’m doing three

Eggs since I’m making this for Adam as Well I’m adding a hummus spread to the toast I feel like guacamole would be really good too but I just bought avocados yesterday so they are not quite ripe enough yet I’m also adding a little bit of lettuce before putting all the vegetables and egg on top of the

Toast here’s yours it’s messy but it’s good it is very messy I gave adam a second piece of bread so you could do that if you don’t want it to be as messy but it is very good I’m not a fan of open face sandwiches just a personal

Preference I like the inside stuff of sandwiches more so I like open face sandwiches but it is messy that’s why I have a fork I’m having a few strawberries to snack on too I’m starting to get hungry for dinner so I’m going to make a salmon

Stir fry with brown rice and broccoli I also have some leftover potatoes I’m going to put those in our stir fry as well we just recently switched to brown rice instead of white rice because it’s an easy swap and it’s a lot healthier I’m starting the rice first so that it

Can cook while we’re cooking everything else for the meal we’re doing 1 and 1/2 cups of brown rice so about 3 cups of water with that having a rice cooker makes it so easy because we can just leave the rice to do its own thing while

We cook the rest of our meal and we don’t have to be watching over the rice the whole time while I cook the broccoli Adam is helping me with cooking the salmon sometimes we’ll dice up the salmon into Cubes but tonight we’re leaving the salmon as fets and then

Adding some salt pepper and garlic to it the broccoli that I’m cooking is Frozen right now so I’m cooking it in a pot with water to let it steam I found that it’s easier for me to get frozen vegetables that way they don’t go as bad

As quickly but I can still make sure that I’m incorporating them into a lot of my meals now that the broccoli is finished steaming I’m draining the water and adding some spices for the broccoli I’m adding salt pepper garlic powder and also Thyme I used the same spices when I made my potatoes that I’m heating up tonight as leftovers we got these really cute bowls that are larger so they’re kind of like a mix between a flate and a bowl and I love these I think it’s great for

Making meals with a lot of vegetables because you’re going to have a larger amount of food on your plate but it also keeps your food contained prevents a lot of the mess that you would have eating on a plate the brown rice actually came out really well with the rice cooker I

Today’s lunch is pretty simple I’m making broccoli mac and cheese with the leftover broccoli that I used for dinner last night and a box of Vita mac and cheese this is definitely a really quick and easy recipe I’ve been trying to eat less Dairy lately but that doesn’t mean

Cutting it out Al together I think focusing on balance is more important trying not to eat just Dairy but adding fruits or vegetables with your meal the water is boiling for the mac and cheese so now I’m adding the noodles in it should only take about 10 Minutes since I already cooked the broccoli last night I just need to microwave it and then mix it all Together when I have mac and cheese I like to add a little bit of extra shredded cheese on top hot sauce is really good you can kind of have a buffalo mac and cheese I’m starting dinner now and I am making vegetarian burrito bowls this should be pretty simple since I’m going

To use the cilantro lemon brown rice that I made last night for dinner I have leftover bean dip that I made with reff fried beans and cheese and also some leftover black beans I decided to mix my tomatoes corn and black beans together actually the corn is the wrong type so

Tuna salad are basically exactly what I use to make toiki sauce so I’m using Greek yogurt lemon juice olive oil and Dill that’s a really great healthy dressing on its own I love using that to dip potatoes in or putting it on Greek pasas but it also works really well for

Making tuna salad Greek yogurt is not only a great alternative for sour cream like how I used it yesterday with our burrito bowls but it’s also a really great alternative to mayonnaise so if you are trying to eat healthier definitely try getting some non-fat plain Greek yogurt here is the final

Mixing this meal all together from the start it tastes very healthy but it’s in a good way the pasta salad was so good but I am full so I’m going to save the rest of this as leftovers and have it later sometime this week or this weekend for dinner tonight I am making

Pesto pasta with salmon and veggies this meal is going to be pretty easy to prepare since I already have leftover noodles from lunch earlier today and I also have leftover salmon from Monday’s dinner it’s great to have some leftovers already on hand that I can incorporate

Into a new meal really easily we only have a little bit of salmon left over but I’m honestly not that hungry from the lunch that we had earlier so that should be completely fine the only thing I really need to cook right now is the vegetables which will be mushrooms and

Red bell peppers but apart from that it’s just heating up the leftovers in the microwave adding some pesto sauce presenting it nicely and that’s it an easy dinner I am dicing up my mushrooms and my red bell peppers right now I like my vegetables to be diced up pretty

Small because I like to have a little bit of everything with each bite if you’re trying to eat more vegetables like I am you definitely want to make sure that they’re integrated into the meal rather than seeming like they’re on the side on their own because then you

Might just avoid them on your Plate I’m cooking my vegetables on a pan but this shouldn’t take too long I need to stir the vegetables occasionally but while they’re going I am just heating up my leftover pasta and salmon in the microwave laying it out on a plate and adding the pesto sauce to the pasta I’m

Just using a little bit but a little bit goes a long way with adding a lot of flavor the veggies are done and everything looks so good Al together I’m sprinkling some feta cheese on top to complete the meal but apart from that it is ready to Eat for lunch today I am making a simple yogurt parfait I’m using non-fat plain Greek yogurt as the base and then I’m adding peanut butter almonds chocolate chips slices of bananas and strawberries I used to add granola to my yogurt Peres as well but I recently realized that it

Has a lot of added sugar so it’s a lot healthier to either not use it or to make your own granola at home and you could do this with oats nuts adding dried fruit but that way you can eliminate a lot of the added sugars that you would get from stought Granola My chicken is finally thawed and the rest of my avocados are right so for tonight’s dinner I’m going to be making chicken tacos with an avocado Black Bean Salsa that’s the same salsa that I made earlier this week when we had burrito bowls I’m using black beans Roma tomatoes avocados lemon juice cilantro

Chili powder garlic powder salt and Pepper the Shelf just Broke that was quite chaotic because my chicken was finishing up and I was trying to grab the mixing bowl to put it in and that shelf just fell apart and then my chicken started burning not actually but almost so now I have to fix that shelf but at least the chicken smells Good I guess this little piece came out of the wall so I’ll put that back in and then slide the shelf back on hopefully it’ll stay put this Time that shelf was a lot heavier than it looked but I was able to put it back together pretty quickly and it’s looking as good as new now this is the same salsa recipe that I made earlier this week the only differences are basically that I’m using more of everything and

There will be a larger proportion of avocado in it this time I typically make a restaurant style salsa that very tomato heavy with onion and green bell peppers but I really loved the salsa that I made earlier this week so that’s why I’m making it Again For tonight’s dinner instead of having a cilantro lemon rice base we’re going to be having tortillas I’ve been having corn tortillas when I make tacos it’s an easy substitute to flower tortillas that’s a lot healthier for you but Adam still prefers the flower tortillas so for his tacos I will use Those it is the final day of my what I eat in a week and for lunch today I’m making Mediterranean chicken pasas with homemade toiki sauuce for this meal I’m slicing a pea in half half will be for Adam half will be for me and then I’m

Stuffing the paa with all of our ingredients which will include hummus chicken chickpeas cucumber tomato banana peppers jalapenos taziki sauce and feta cheese taziki sauce is very simple to make it’s Greek yogurt lemon juice olive oil and Dill to finish off my pea I’m adding the taziki sauce and sprinkling some feta cheese on top these are definitely messy so you’ll probably want Fork to eat anything that falls out of your PE but they do taste so good and they’re healthy if you really want to avoid the
