♡ Recipe. Gluten-free spinach pancakes with salmon

Ingredients:
Lettuce-romaine – a few leaves
Avocado – 1 pc.
Cream cheese – 3 tbsp
Provence herbs – 1 tsp
Cucumber – 1 pc.
Lightly salted salmon – 100 g
Eggs – 3 pcs.
Olive oil
Salt pepper
Spinach – 100 g
How to:
Chop spinach
Grind spinach with an immersion blender
Add eggs, and beat with a blender until smooth
Salt, pepper
Add dry herbs
Heat up a frying pan and brush it with olive oil
Fry the spinach pancake on one side for 2 minutes until done
Turn over and fry for another 1-1.5 minutes
Let cool
Peel cucumber
Remove the cucumber core
Cut the cucumber into thin strips
Peel avocado
Cut avocado into strips
Slice salmon
Cut romaine lettuce into strips
Spread cream cheese on the pancake
Put salmon, cucumber, avocado and lettuce in the middle
Wrap the pancake
Enjoy!
