Easy & Healthy Breakfast: Ube Mochi Pancakes Recipe!

Looking for a fun pancake recipe that’s both easy AND healthy? Thanks, Trader Joe’s, for this purple Ube Mochi Pancake (& waffle if you prefer!) mix! 🥞
Here’s how to make 12 pancakes:
1) Preheat your griddle to 350°F.
2) In a large mixing bowl, whisk together 3 eggs, 3 tbsp coconut oil, and 3 tbsp water.
3) Add the full bag of pancake mixture and whisk well until combined and smooth.
4) Oil your griddle and cook each pancake for 2 minutes.
5) Flip and cook for an additional 2 minutes.
6) Serve immediately with your favorite toppings! 🤤
