The perfect plant based lunch! Roasted tomato sandwiches with garlic aioli. Highly recommend adding greens & avocado 🥑 If you have fresh tomatoes right now, you have to make this!

Ingredients:
This makes 2-3 sandwiches
Tomatoes:
2 tomatoes
1 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
Garlic Aioli:
1/4 cup vegan mayo
2 tbsp lemon juice
1 1/2 tsp garlic powder
Salt & pepper to taste
Others:
1 ripe avocado
Handful of spinach
4-6 slices of fresh bread
Instructions:
Slice the tomatoes & add to a baking sheet lined with parchment paper
drizzle with olive oil
Sprinkle with garlic powder, salt & pepper
Roast at 375F for 12 minutes
While the tomatoes cook,
Toast the bread lightly in a pan in some olive oil until crispy on both sides
Mix together the mayo ingredients in a small bowl
When the tomatoes are done, assemble your sandwiches!
