Vegan Cobb Salad
Makes 3 (32-ounce) jars
Ingredients:
✅tofu ‘chicken’:
Optional: Freeze the tofu in the packet for at least 24 hours. Thaw in refrigerator.
8 ounces extra firm tofu, pressed, cut into ¾-inch cubes
½ tablespoon soy sauce or tamari
½ teaspoon garlic powder
½ teaspoon onion powder
1 ½ teaspoons nutritional yeast
¼ teaspoon salt
Pinch of black pepper
1 teaspoon cornstarch
½ teaspoon neutral flavored oil (optional)
✅chickpea ‘egg’:
1 (15-ounce) can chickpeas, rinsed, and drained
Zest of half small lemon
Drizzle of lemon juice
1 tablespoon nutritional yeast
Dash kala namak optional
Dash garlic powder
✅coconut bacon (optional):
1 cup coconut chips
1 tablespoons tamari or soy sauce
½ tablespoon maple syrup
¼ teaspoon smoked paprika
Pinch of chipotle powder
Salt to taste
✅For the hemp seed dressing:
¾ cup hemp hearts
1 tablespoon maple syrup
2 to 3 garlic cloves
1 tablespoon apple cider vinegar
2 tablespoons lemon juice
1 ½ teaspoons Italian seasoning
Salt and freshly ground black pepper
2/3 cup water
✅1 pint grape tomatoes (about 3 cups halved)
1 head Romaine lettuce (about 9 cups chopped)
¼ cups plus 2 tablespoons chopped chives
1 large avocado, chopped
✅Preheat oven to 425ºF.
Toss tofu with all tofu ingredients. Air fry or bake on nonstick baking sheet for about 20 minutes, or until crispy.
✅Rub chickpeas between layers of a kitchen towel to dry. Place them on a large rimmed baking sheet. Toss them in the chickpea ingredients. Roast for 20 minutes.
✅Toss the coconut flakes in the coconut chips ingredients. Bake in a single layer on a rimmed sheet at 325ºF for about 15 minutes, or until crispy, tossing every 5 minutes.
✅Place dressing ingredients in a high-speed blender. Blend until smooth. Add more lemon juice, salt, and pepper.
✅To 3 (32-ounce) jars: Add 1/3 cup dressing, 1/2 cup chickpeas, one third tofu, and 1 cup tomatoes. Add 1/3 cup coconut bacon to each jar, reserving the rest for serving. Add 3 cups lettuce, and 2 Tbsp chives to each jar.
✅For serving: Shake well. Invert the jar over a medium bowl. Top with avocado, and remaining coconut bacon. #veganrecipes #salad #salads #glutenfree #veganfood #plantbased
