CREAMY HONEY DIJON GARLIC SHRIMP! Ummm I can’t even with this sauce—guys it’s so so yummy. Make this one when you want to impress—it’s super simple and absolutely delish. Dip some crusty bread in that leftover sauce—you won’t regret it!

Ingredients:
1 pound shrimp (peeled/deveined)
1 tsp paprika
1/2 tsp salt
1/2 tsp pepper
Olive oil
4 cloves garlic (minced)
1 cup veggie or chicken broth
3/4 cup full fat coconut milk
1/4 cup mustard (I used yellow and dijon)
3 tbsp honey
2 tbsp balsamic
Juice of 1/2 lemon
1 tsp paprika
1 tbsp dill
1/2 tsp pepper
1 tbsp capers
Toppings: hot sauce, chopped fresh dill and chopped chives

1️⃣Season the shrimp with salt, pepper and paprika. Heat a skillet (I used cast iron) over medium high, add a drizzle of olive oil and cook shrimp for 2 minutes per side. **Spread out the shrimp, and cook in batches if need be.** Remove shrimp and place in a bowl. 2️⃣ Add a generous drizzle olive oil to the pan, add the garlic and cook about 30 seconds until fragrant. Add the broth, coconut milk, mustard, honey, balsamic and lemon juice. Whisk to combine. Cook for about 10-15 minutes, until the liquid has reduced by about half. 3️⃣ Add the dill, capers and pepper. Add the shrimp back and toss in the sauce and cook for about 30 seconds. Remove from heat and top with toppings.
