ONE PAN WILD RICE AND CHICKPEA PILAF

Serves 2-4
Ingredients:
1 tablespoon olive oil
1 small onion, finely chopped
1 small carrot, grated
1 cup basmati or jasmine rice (I used wild rice)
1/2 teaspoon allspice
1 teaspoon dried thyme
pinch of cayenne pepper
1 cup cooked or canned chickpeas
1/3 cup golden raisins
2 cups water or vegetable stock
shaved and fresh parsley or coriander, for serving
Method:
In a large pan heat oil over medium heat and add onions. Cook for 3 minutes and add carrots. Cook for another couple of minutes. Add rice, spices, chickpeas and raisins, mix to combine and cook for 5 minutes. Add in water/vegetable stock and cover the pan. Bring to a boil and simmer for 15 to 20 minutes. Remove from heat and leave covered for an additional 10 minutes. Stir in chopped parsley/ coriander and serve garnished with shaved almonds. Enjoy right away.
