the flavor combination is SO good! i made a few tweaks and it came together in 20-minutes and my 3 year and 1 year old devoured it. i also want to try adding some salmon in it too next time as i think that would be a great addition.
RECIPE:
1 cup quinoa (the OG has bugler wheat)
1/2 cup red onion, chopped
1/2 cup parsley, chopped
1/3 cup mint, chopped
1/2 cup chickpeas, rinsed
1/3 cup pistachios, unshelled
1/2 cup cucumber, chopped
1/2 cup crumbled feta cheese
olive oil, lemon and sea salt and pepper to taste
