In today’s video, I’m sharing my weekly meal plan with you as well as the recipes for each dinner idea! I’ve been doing lots of grocery haul/meal planning videos lately and people have been asking for recipes to go with them so here they are!(see below for recipes) I’m also spicing up this weeknight dinner idea video by planning easy, healthy dinners using only food I already have on-hand! Recipes:
“Bean yumminess”: Rinse black beans and season with taco seasoning, to taste. Warm until taco seasoning is fully mixed and serve with your choice of shredded cheese, tomatoes, lettuce, sour cream and any other taco “fixings.” Serve in taco shells, on its own or with tortilla chips.

Baked chicken: Marinate boneless, skinless chicken breasts in Italian dressing. The longer it marinates, the more flavor it will have. Coat marinated chicken in Bisquick or other baking mix. I use the Simple Truth Organic Baking Mix. Once coated and put on cookie sheet/baking dish, put a small pat of butter on each piece or drizzle with olive oil. Cook in preheated oven preheated to 350 degrees and cook for one hour.

Chicken Pot Pie: Preheat oven to 375 degrees. Mix one can (10.75 oz) condensed cream of chicken soup, 1/2 C sour cream in a baking dish. Add 2 cups chopped, cooked chicken, 16 oz frozen mixed vegetables and 1 cup shredded cheddar cheese to the dish.
Homemade biscuits: Combine 1 cup baking mix, 1/4 C sour cream and 3 TBSP milk together until stiff dough forms. You might need to add more milk if it’s too stiff. Drop heaping spoonfuls of biscuits over chicken mixture.
Bake for 35 minutes or until biscuits are golden brown. If you prefer, can can separately cook pre-made biscuits and place them on top after the chicken mixture has cooked for 35 minutes.

Italian Chicken: Preheat oven to 400 degrees F. Combine 1-2 cans (14.5 oz) diced tomatoes, 3 cloves garlic, 1 tsp Italian seasoning, 1 tsp dried oregano and 1 yellow onion in a mixing bowl until mixed. Cut boneless, skinless chicken breasts and place in baking dish. I use glass and it doesn’t need to be greased. Pour tomato mixture over chicken breasts and drizzle with olive oil. Make sure chicken is fully coated with tomato mixture. Bake for 35 minutes or until chicken is fully cooked. Sprinkle with parmesan cheese or mozzarella cheese and let melt. Serve with side-salad or garlic bread.

Turkey Noodle:
Brown ground turkey, once browned, add 3-4 cloves of garlic. Mix in 1 can (14.5 oz) of diced tomatoes, 1 TSP Italian seasoning, ½ TSP dried basil and cook on stovetop until thoroughly mixed. Transfer to a large pasta pot along with pasta of your choice. I use about ¾ box of elbow noodles. Add 3 cups of water and stir to combine meat mixture with noodles. Cook on medium and stir frequently to avoid burning and until pasta is cooked to your liking. Sprinkle with parmesan cheese.
